• Preparation time: 3hrs
• Cooking time: 30mins.

• Ingredients:
1. Urad Dal: 2cups
2. Dahi: 4cups
3. Chutney: pudina, tamarind
4. Red chilly powder,chat masala,sev,green chillies, coriander, spices

• Cook in this way:
1. Soak urad Dal for 2hrs. Grind the soaked dal by adding green chillies.
2. Add spices to the grinded dal and beat it fast till the Dal rises.
3. Now make small balls and fry them.
4. Take a bowl of water,add pinch salt and add the fried vadas to it to get soft.
5. Take curd,add pinch salt and sugar and make it creamy by beating.
6. Take the soften vadas,add curd on the top along with both the chutney, spice powder,sev and garnish with coriander.
7. Dahi vadas are ready to relish

‘Chaat’ is one of the most delicious & loved category of food. It has varieties in it and this differs from region to region.

Ingredients:
1. Papdi : Refined flour,oil,salt, black pepper powder,kasuri methi, baking soda.
2. Salad : Cucumber, Onion, tomato, boiled Black chick peas.
3. Pudina Chutney, Tamarind Chutney,Chat masala,namkeen

Cook in this way:
1. Papdi:
• Knead a tight dough using refined flour and other ingredients & hot oil.
• Rest it for 5-8mins and make small balls.
• Flatten the balls like chapati but it should be thick. Cut it into small round shape using small bowl/cutter.
• Fry them on medium high flame.
2. Chat:
Take the papdi,apply both the chutney,add the salad topping,chat masala and namkeen. Ready to eat

Vegetable Manchurian

• Quantity: 4 people
• Cooking time: 35 mins

Ingredients:
1. Cauliflower – 1 medium size
2. Cabbage – 1 small size
3. Carrots – 2-3 piece
4. Beans – 4-5
5. Capsicum – 1
6. Cornflour – 1 cup
7. Refined flour – 1/2 cup
8. Ginger garlic paste
9. Black pepper powder
10. Sauce – tomato,soya, chilly, vinegar

Cook in this way:
1. Chop the vegetables finely.
2. Make a dough by adding cornflour, refined flour,ginger garlic paste,black pepper powder,salt and chopped vegetables.
3. Make small balls and coat it with cornflour paste and fry.
4. Sauce: heat pan,add oil, chopped garlic,chopped capsicum,onion, carrot, cabbage and fry a little. The flame should be high.
5. Add soya sauce, chilly sauce,vinegar, tomato sauce and cook. Add the cornflour paste and the gravy thickens.
6. Add Manchurian balls and toss in the sauce. Garnish with spring onion and enjoy

Mango Rasmalai | Sweet dish |2cleverfools

Mango is the most favorite fruit relished by all. In India,mango season occurs from March-June. There are variety of mangoes like Hapus,kesar and many other as per the area.

Mango Rasmalai is a must go sweet this mango season. Check out the recipe

• Quantity: 4 people
• Cooking time: 1hr

Ingredients:
1. Milk – 2litres
2. Dry fruits – as needed
3. Sugar – 1small cup (or as required)
4. Paneer – 100gms
5. Cardamom powder – 1tsp
6. Kesar – 1tsp
7. Mango – 4 medium size

Cook in this way:
1. Rabdi:
• Boil milk for 10mins. Add sugar,dry fruits, cardamom powder. Boil again till the milk thickens. Let it cool.
• Peel the mangoes and make puree of the pulp.
• Add the puree to the Rabdi.
2. Paneer balls:
• Grate paneer and knead it for 10mins continuously.
• Make small balls.
• Heat pan add 2 cups water and boil it for 5mins. Add sugar and boil it again.
• Add paneer balls and boil for 15mins.
• Now cool it down and squeeze syrup from the balls.
• Add these balls to the Rabdi
• Mango rasmalai ready to eat.

Oreo Cake
  • Quantity: 2 people
  • Preparation time: 5mins
  • Cooking time: 10mins

Ingredients:
• Oreo biscuits – 12-15
• Baking powder – 1 tsp
• Milk – half cup

Cook in this way:
• Take biscuits and separate the cream.
• Crush the biscuits and make powder,add baking powder to it and add milk gradually and make a small paste.
• Take a pan and brush oil. Add the mixture to the pan and heat on slow medium flame for 8-10mins
• Till than take the cream add 1tbsp milk and make a smooth creamy paste and freeze for 5mins
• Cool the cake and cut it into half or desired shape. Take one piece and apply cream to it and close it with other half.
• Garnish with crushed chocolates and ready to eat

• Boiled potato – 1
• Soaked sabudana – 1cup
• Chopped onion – 1
• Coriander,spices,oil

Cook in this way
• Heat pan,add oil, chopped onions. Fry them a little. Add spices and chopped boiled potatoes.
• Add soaked sabudana to this.Cover and cook for 5-8mins. Garnish.with coriander.
• Ready to relish with curd.

Masala Chane

Quantity: 4people
Preparation time: 6hrs
Cooking time: 30mins

Ingredients:
• Kabuli Chane,Onion,Tomato,Ginger garlic paste,chana masala,khada masala,Malai, spices.

Cook in this way:
• Soak Kabuli chana for 5 hrs.
• Make a small potli with khada masala and tea powder and add it to the cooker along with chane and water.Pressure cook the chane for 5-6whistles.
• Heat pan add oil and add chopped onion,ginger garlic paste to it. Fry until it turns brown. Add chopped tomato and fry until it leaves oil at the side.
• Add malai and spices to the gravy. And cook this for 5mins. Now add cooked chane to it and cook by adding little water.Keep on stir and cook by adding water for 15mins. Adjust water consistency as needed.
Chana masala is ready to eat

Southie breakfast_ Idli Chutney Sambhar

South Indian breakfast is considered healthy and delicious. This includes many varieties which can be cooked easily.

‘Idli’ is one of the famous South Indian breakfast. It is relished with Chutney and Sambhar. Have a look

Idli Chutney Sambhar (ICS)

Quantity: 4people
Preparation time: 12hrs
Cooking time: 1hr

Ingredients:
1. Idli
• Idli rawa – 2cups
• Urad Dal – 1cup
2. Chutney:
• Crushed coconut,peanut powder,roasted chane powder(futane),garlic,ginger,green chilly,salt, mustard seeds,jeera,white sesame seeds,hing
3. Sambhar:
• Arhar Dal,onion,tomato,garlic,ginger, beans,potato, spices, tamarind water,jaggery

Cook in this way
1. Idli:
• Soak Urad Dal for 3-4hrs and grind it. Keep it aside
• Soak Idli rawa for 10mins. Remove excess water.
• Add the Urad Dal paste to the idli rawa and mix. Keep it overnight for fermenting.
• Take the fermented batter, add pinch of salt and baking soda.
• Take the idli mold and add the batter to it. Steam it for 15-20 mins & idli is ready
2. Chutney:
• Grind together crushed coconut,peanut powder,futane powder,garlic-ginger-chilly paste.
• Add salt as required,adjust water consistency as needed.
• Make a tadka by heating oil adding mustard seed,jeera,hing, sesame seeds. Add tadka to the chutney and it’s ready.
3. Sambhar:
• Steam arhar dal of 3whistles.
• Heat pan,add oil, mustard seeds,jeera, chopped onion, garlic ginger paste and fry a little. Add chopped tomatoes also cook a little.
• Add the other vegetables and fry them. Add tamarind water to it.
• Add spices,sambhar masala,jaggery and water as required.
• Add cooked Dal and keep boiling for 10-15mins.
• Ready to eat

The Maharashtrian Famous _ PAV

‘Pav’ is a popular food in Maharashtra. It is a bread/ bun. The popular food snacks are mostly eaten with this bread.

Have a look at the recipe and enjoy the famous delicacy.

Quantity: 4people
Preparation time: 2hrs
Cooking time: 1hr

Ingredients:
Maida-3cups
Milk – 2cups
Sugar – 2tsp
Salt – 1tsp
Yeast – 7gms
Butter/ghee – 4tbsp

Cook in this way:
• In a wide bowl take 1 cup warm milk,sugar,yeast & mix and leave it for 5minutes. (Yeast activates).
• Seive maida,salt and add to the above mixture and form a dough. Add 1/4 cup of milk again and keep on kneading the dough for 10mins.(it turns Sticky)
• Apply 2tbsp butter to the dough and again knead for 5minutes.
• Cover the dough and it aside for 1hr 30mins.
• Now take the dough and punch a little and make small balls and keep these balls into the baking tray.
• Apply brush of milk on the top and keep these aside for 20minutes.
• Now bake the pav for 20minutes.
• After they are baked apply butter to the baked pav and cover it with wet cloth for 20minutes. And ready to relish

Himachali Food_ Buraans ke phool ki chutney

Himachal Pradesh has a unique taste of food. People here mostly have a savoury flavor touch in their food.

Chutney is a special part of their diet. This is the chutney from the flowers which are found here in late winters. ‘Buraans ke phool’ i.e. Rhododendron flower.

Ingredients:

  • Petals of the flower
  • Tamarind Juice
  • Pudina leaves
  • Salt
  • Fennel seeds
  • Sugar

Method:

  • Grind together the above ingredients.
  • Enjoy this with dal and rice.
