Sweet dish is something for which everyone is eagerly waiting after having food. There are many varieties .

Rasmalai is something which is made of milk. Have a look at the recipe

• Quantity: 4people
• Cooking time: 1hr

• Ingredients:
1. Milk – 2litres
2. Dry fruits – as needed
3. Sugar – 1small cup (or as required)
4. Paneer – 100gms
5. Cardamom powder – 1tsp
6. Kesar – 1tsp

• Cook in this way:
1. Rabdi:
• Boil milk for 10mins. Add sugar,dry fruits, cardamom powder. Boil again till the milk thickens. Let it cool.
2. Paneer balls:
• Grate paneer and knead it for 10mins continuously.
• Make small balls.
• Heat pan add 2 cups water and boil it for 5mins. Add sugar and boil it again.
• Add paneer balls and boil for 15mins.
• Now cool it down and squeeze syrup from the balls.
• Add these balls to the Rabdi
• Refrigerate for one or two hrs and enjoy.

Sometimes we have leftovers at home and we think of not wasting it and using it somewhere. Today’s recipe is all about makeover of leftover.

Idli is a one of the favorite popular breakfast. Had some leftover idlis. So thought of making a evening snack from the same. Have a look at the Idli Chilly.

Quantity: 4people
Cooking time: 20-25 mins

Ingredients:
• Idli – 8-10
• Vegetables: Capsicum,onion, cabbage, peas
• Sauce: Soya, Chilly, Tomato
• Cornflour,Maida,salt, pepper

Cook in this way :
• Cut idli into cubes. Prepare a batter using 5tbsp maida and 5tbsp cornflour. Add salt pepper water to it. Coat the idli cubes with the batter and fry them.
• Take a pan,add oil, chopped vegetables and half cook it. Add sauces to it and cornflour slurry (mix 1 small spoon cornflour into 1/2 cup water). Cook a little.
• Add the fried idli cubes to it and give it a toss.
• Enjoy with sauce

Veg Dum Biryani| Shahi Bhojan |2cleverfools

The Shahi Bhojan indicates food which is considered royal. Dum Biryani is one of it. Vegetable Dum Biryani is full of flavors. Each bite is filled with deliciousness.

India has varieties of rice too. Special type of variety is used in Biryani i.e. basmati. Have a look at the recipe .

Quantity: 4 people
Cooking time: 1hr

Ingredients:
Basmati Rice – 1 cup
Curd – 1/2 cup
Spices – Cardamom,Cloves,black pepper, cinnamon,
Chopped fried onion – 5
Vegetables as available : Peas, cauliflower, beans,paneer.

Cook in this way:
1. Soak rice for 30mins. Take a deep pan to cook rice. Boil water, add spices, salt and ghee. Let it boil, add soaked rice to it and cook for two minutes on large flame. After 2mins slow down the flame to medium & cook the rice till it is 70% cooked. Strain it and keep it aside.
2. In a bowl take chopped veggies,curd, spices and fried onions. Marinate the veggies. Half cook the veggies in another pan.
3. Take a handi and start layering. Add cooked veggies,top of it add cooked rice,add saffron milk,fried onions,pudina leaves. Again layer it by this way.
4. Now cover the handi with lid, you can use dough to cover the sides of the lid.
5. Cook this for 15-20mins.
6. Enjoy the delicacy with raita

Vegetable Momos |Snacks|2cleverfools

Momo is one of the famous delicacy observed around. Himachal has Momos as a street snack and most loved of all.

There are varieties of momos here like veg momos, chicken momos, tandoori momos. Chocolate momos is now in trend. Let’s go for the basic veg momo today. Check out the recipe

  • Quantity: 4people
  • Cooking time: 1hr

Ingredients:
1. Cover:
• Maida
• Water
• Salt
2. Stuffing
• Chopped cabbage – 2
• Paneer – 100gms
(any available vegetable like peas, carrots)

Cook in this way
• Knead a soft dough using maida, water and salt. Rest the dough for 30mins
• Prepare stuffing by using chopped vegetables,add spices,soya sauce and add salt just before filling
• Make small flat circles like poori (smaller than that).
• Add stuffing and close the Momo’s with any desired shape.
• Take a steamer/idli maker, add water to the bottom part. Grease the plates with oil and place Momo’s into it.
• Steam it for 15mins. And enjoy with Chutney

Mango Cake | Dessert| 2cleverfools

The king of fruits is in season. Variety of dessert can be prepared from this favorite fruit. Mango cake is the loved one.

Mango cake

Quantity: 4people
Cooking time: 1hr

Ingredients:
1. Cake
• Chopped Mango – 1cup
• Sugar – 3/4th cup
• Oil – 1/2 cup
• Maida – 2 cups
• Baking soda – 1/4 tsp
• Baking powder – 1tsp
• Milk – 1/4th cup.
2. Ganache :
• Chopped Mango – 1 cup
• Sugar – 1/4th cup
• Water – 1/2 cup

Bake in this way:
1. Make puree of the chopped mangoes and sugar.
2. In a large bowl take the puree,add oil,yellow food color mix this.
3. Seive maida,baking soda,baking powder,salt. Now mix this with puree and mix with cut and fold method. Add milk and again mix.
4. Transfer the batter into the cake tin and bake in a preheated oven for 40-45 minutes at 180°C
5. For ganache take the mango sugar puree and heat it and water and mix and heat for 5-8mins until it is thick.
6. Cool the cake and cut the upper part now add the ganache on the top of the cake and refrigerate it half and hour.
7. Garnish with fruits or as liked by everyone.

Atta Bread|Wheat Bread |Healthy |2cleverfools

Bread is one of the most consumed and favorite item for breakfast. It has varieties of ways to eat. As, it is part of daily food it should be healthy. So tried making bread from wheat flour.

Quantity: 4people
Preparation time: 2hrs
Cooking time: 1hr

Ingredients:
Atta -3cups
Milk – 1cup
Sugar – 2tbsp
Salt – 1tsp
Yeast – 1/2 tbsp
Oil – 2tbsp
Water – 1/2 cup
Sesame seeds – 1 small spoon (optional)

Cook in this way:
1. Take warm milk in a bowl, add yeast,sugar and keep it aside for 3-4 mins. Yeast activates.
2. Add atta to the above mixture ,add salt,oil and mix it.
3. Add water and knead gently.
4. Knead the dough for around 8 mins by folding.
5. Cover the dough and rest it for 2hrs.
6. Now,take the dough and again knead it for 5-7 mins. Place the dough in the bread pan and let it rest for 30mins.
7. Brush some milk and add sesame seeds on the top.
8. Bake the bread in a preheated oven at 180°C for 30mins.

• Ingredients:
1. Fruits (mango, pomegranate, muskmelon any fruit of your choice)
2. Vanilla ice cream
3. Dry fruits
4. Gond katira
5. Tutti fruitti

• Cook in this way:
1. Soak the gond katira in water for 2-3 hrs (turns into form of crushed ice)
2. Take a glass. Arrange the layers.
3. Layer this with soaked gond katira above it add mango than ice cream, pomegranate,gond katira, muskmelon,than final layer of ice cream and top it with dry fruits and tutti fruitti.

Dum aloo|Main course| 2cleverfools

Potato is the most favorite, regularly used and popular vegetable. So many varieties can be prepared from this single vegetable. Snacks,main course and dessert it can be used in any way.

One of the popular thing is Dum aloo. This is a delicious sabji and mostly cooked in North India. These are our farm grown potatoes. Let’s have a look at the recipe

Quantity: 4people
Preparation time: 10mins
Cooking time: 30mins

Ingredients:
• Boiled baby potatoes – 8-10
• Chopped onions – 2
• Chopped tomatoes – 2
• Malai
• Spices
• Ginger garlic paste
• Coal

Cook in this way
• Fry the boiled baby potatoes.
• Stir onions and tomatoes and make a paste by grinding.
• Take a handi like vessel,add oil, ginger garlic paste and onion-tomato paste and cook for 5-7 mins until it leaves oil at the sides.
• Add spoonful of malai to it. Add spices and cook everything for 7-8mins.
• Add the fried baby potatoes to the gravy and cook for 5mins. Add water as needed.
• Heat the coal piece, place a small bowl in the sabji handi. Place the heated coal in the bowl and add a little ghee and cover the vessel immediately.
• This is Dum aloo

Shahi Tukda |Eid Special| 2cleverfools

Festival is all about sharing food and happiness. As other festivals include s variety of food, Eid is also celebrated with some unique delicacies.

Shahi Tukda is one of the delicacy cooked. Originated from Lucknow (as per one of the story) this was so rich and full of flavors and loved by the people. The common people named it Shahi tukda.

Let’s have a look at the recipe

• Quantity: 4 people
• Cooking time: 2hrs

• Ingredients

  1. Milk – 2 litres
  2. Sugar – 2 cups
  3. Bread – 8 pieces
  4. Dry fruits, Cardamom powder

• Cook in this way:

  1. Boil milk to a high temperature,add dry fruits,elaichi,sugar and keep boiling it until it turns thick.
  2. Take the bread pieces,cut the edges and fry them (stir or deep it’s optional) until it is light brown white in color.
  3. Sprinkle some Cardamom powder on it and cut it into half (triangle shape)
  4. Arrange the bread pieces in the plate (you can add two pieces one above the other to get that thick tukda).
  5. Add rabdi on the top,garnish with some dry fruits and refrigerate it.
  6. Serve it chilled and enjoy the delicacy.

Everyone around is trying to eat healthy stuff all the time. The tea time snacks should be delicious and tasty along with it’s healthiness.

These are atta biscuits with self stamped name on it. This is easy and fun too. Kids will be attracted to this.

Recipe is here:

• Quantity: 4 people
• Cooking time: 30 mins

• Ingredients:
1. Wheat flour – 1 cup
2. Unsalted Butter – 1/2 cup
3. Powdered sugar – 1/4 cup
4. Baking Powder – 1/2tsp
5. Baking soda – 1/4 tsp
6. Salt – a pinch
7. Cinnamon powder – a pinch (optional)
8. Milk – 3-4 tbsp

• Cook in this way:
1. Take butter and powdered sugar and beat it to form a creamy texture.
2. Seive Atta, baking, powder, baking soda,salt, cardamom powder and add it to the butter mixture.
3. Combine all the things & form a dough (don’t over knead). Add milk to it and combine again.It should be a crumble texture.
4. Flatten the dough and cut the biscuits into round shape (or as desired). Take the alphabet stamp and press the name on the cookies.
5. Bake them in a preheated oven at 160°C for 15mins and ready to eat.
